摩洛哥炙雞 Moroccan Grilled Chicken

材料A Ingredients
去骨去皮雞胸肉 Boneless skinless chicken breast 4 個 ea
摩洛哥醃料 Moroccan Marinade 1 份 portion
黃金葡萄乾醬 Golden raisin sauce 1 份 portion
食用油 Cooking oil 2 大匙 Tbs

配菜﹕ 蒜油烤蔬菜和糙米飯。

Side Dish: Grilled Vegetables with Garlic Oil & brown rice.


做法﹕
1.準備好摩洛哥醃料。
2.雞胸肉橫切成兩片,再用紙巾擦乾。雞肉上鋪上一層保潔膜,用肉槌平滑的那一面將雞胸較厚的地方槌薄。
3.將雞肉和醃料一起裝在帶拉鏈食物級的塑膠袋內,仔細搓揉讓每片雞肉都沾到醃料。放進冰箱醃至少1個小時,但不要超過3個小時。
4.燒熱烤盤後刷上一層油。取出雞片放上烤盤用中大火烤炙2分鐘。刷上醃料後翻面再烤到雞變熟,大約再2分鐘。



PROCEDURE:
1.Prepare the Morocco Marinade.
2.Horizontally cut each chicken breast in half and dry them with paper towels. Cover the chicken with a piece of plastic wrap and use the flat side of a meat mallet to pound the chicken breast to make it evenly thick.
3.Place the chicken and marinade in a zip-lock food grade plastic bag. Rub the bag and make sure that each chicken filet is covered with the marinade.
4.Heat the grill pan and brush with a thin layer of oil. Grill the chicken over medium high heat for 2 minutes. Brush with the remaining marinade and turn the chicken over. Continue to cook until the chicken is done, approx. 2 minutes.
